Ingredients
- 2 whole soft-shell crabs, cleaned
- ½ cup all-purpose flour
- 2 whole burger buns
- 1 cup shredded cabbage and carrot slaw
- 3 tbsp mayonnaise
- 1 whole lemon

Pat the crabs dry with paper towels. Season generously with salt and pepper on both sides.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 60 seconds.

Dredge each crab in flour, coating both sides, then lay gently in the pan. Fry 3 minutes per side until golden and crispy.

Toast the buns in the same skillet while the crab rests, about 90 seconds, until edges are golden.

Toss the slaw with 1 tbsp mayo and the juice of half the lemon. Spread remaining mayo on the buns.
