Ingredients

  • 2 lbs pork spare ribs or baby back ribs
  • 2 tbsp smoked paprika
  • 6 cloves garlic, minced
  • ½ tsp caraway seeds (optional, traditional)
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper

Instructions

  1. 1

Pat the ribs dry with paper towels. Season generously on both sides with salt and black pepper.

  2. 2

Mix paprika, minced garlic, caraway seeds (if using), and olive oil in a small bowl until paste-like.

  3. 3

Rub the spice paste evenly all over both sides of the ribs, coating thoroughly.

  4. 4

Arrange ribs on a sheet pan in a single layer. Roast at 475°F for 18–20 minutes.

  5. 5

Ribs are done when edges are deeply caramelized and meat pulls away slightly from the bones.

  6. 6

Rest 2 minutes, then serve hot with lemon wedges or mustard on the side.
