Ingredients

  • 2 cups cooked jasmine rice, cooled
  • 3 whole dried red chilies
  • 4 clove garlic cloves
  • 1 tbsp fish sauce
  • ½ lb shrimp and/or squid, small-diced
  • 2 whole eggs
  • 2 tbsp fresh Thai chilies or scallions, sliced

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers.

    Toast dried chilies and garlic until fragrant and lightly charred, about 2 minutes. Remove to a plate.

    Add diced shrimp and squid to the skillet; stir-fry until opaque, about 3 minutes.

    Add rice and break up clumps with a spoon; stir-fry for 3 minutes until rice is hot and edges crisp.

    Mash toasted chilies and garlic into a paste; stir into rice with fish sauce and salt to taste.

    Push rice to the side, crack eggs into the pan, and fry until whites set but yolks jiggle, 2–3 minutes.

    Divide rice and eggs between bowls; top with fresh chilies and serve immediately.
