Ingredients
- 2 cups cooked jasmine rice, cooled
- 3 whole dried red chilies
- 4 clove garlic cloves
- 1 tbsp fish sauce
- ½ lb shrimp and/or squid, small-diced
- 2 whole eggs
- 2 tbsp fresh Thai chilies or scallions, sliced
Instructions

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers.

Toast dried chilies and garlic until fragrant and lightly charred, about 2 minutes. Remove to a plate.

Add diced shrimp and squid to the skillet; stir-fry until opaque, about 3 minutes.

Add rice and break up clumps with a spoon; stir-fry for 3 minutes until rice is hot and edges crisp.

Mash toasted chilies and garlic into a paste; stir into rice with fish sauce and salt to taste.
