Ingredients

  • 2 cups cooked white rice, cooled
  • 3 tbsp red curry paste
  • ½ lb mixed protein (shrimp, chicken, or diced pork)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1.5 tbsp fish sauce
  • 2 tbsp pre-made tom yum paste or instant tom yum broth
  • 1 ea fresh lime (juiced), spring rolls, and Thai iced tea to serve

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.

    Add curry paste and stir constantly for 30 seconds until fragrant, then add the mixed protein.

    Cook protein, stirring, until just cooked through (shrimp opaque, chicken no pink), 4–5 minutes.

    Add cooled rice and frozen vegetables, breaking up rice clumps with a spoon, stirring 3 minutes.

    Add fish sauce and 1 tbsp water, toss until combined and heated through, about 1 minute.

    Meanwhile, bring 3 cups water to a boil in a small pot, add tom yum paste, simmer 2 minutes.

    Plate curry rice, ladle tom yum broth alongside, serve with spring rolls, lime wedge, and iced tea.
