Ingredients
- 2 cups cooked white rice, cooled
- 3 tbsp red curry paste
- ½ lb mixed protein (shrimp, chicken, or diced pork)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1.5 tbsp fish sauce
- 2 tbsp pre-made tom yum paste or instant tom yum broth
- 1 ea fresh lime (juiced), spring rolls, and Thai iced tea to serve

Add curry paste and stir constantly for 30 seconds until fragrant, then add the mixed protein.
