Ingredients
- 2 medium potatoes, boiled and mashed
- ½ cup chickpea flour (besan)
- ¾ cup plain yogurt
- 3 tbsp tamarind chutney
- ¼ cup fresh cilantro, chopped
- ½ cup neutral oil for frying

Mix mashed potatoes with 2 tbsp chickpea flour, 1/4 tsp salt, and 1/4 tsp chili powder until just combined.

Shape mixture into 4 flat, 2-inch patties. Heat oil in a 10-inch skillet over medium-high heat.

Slide patties into hot oil and fry 3 minutes per side until edges brown and char lightly.

While patties fry, whisk yogurt with 1/4 tsp salt. Mix remaining chickpea flour with water to form a thick paste, drop spoonfuls into the oil, and fry until golden, ~2 minutes.
