Ingredients

  • 1 lb russet potatoes
  • ½ medium yellow onion
  • 3 large eggs
  • 4 oz smoked salmon
  • 2 cups mixed green salad
  • ½ whole lemon
  • 2 tbsp all-purpose flour

Instructions

    Peel and finely grate potatoes and onion into a clean kitchen towel. Squeeze hard to remove all liquid, then transfer to a bowl.

    Toss potatoes with 1 egg, flour, salt, and pepper until combined. Heat a large skillet over medium-high with oil until shimmering.

    Divide mixture into 4 patties and press flat into skillet. Fry 4 minutes per side until dark golden and crispy at edges.

    Slide pancakes to a plate. Add a bit more oil to skillet, crack in remaining 2 eggs, and fry until whites set but yolks jiggle.
