Ingredients

  • 3 whole potatoes, medium waxy
  • ½ cup all-purpose flour
  • 3 tbsp butter
  • 2 cups green cabbage, shredded
  • 2 tbsp white vinegar
  • 1 tsp granulated sugar

    Boil potatoes whole, skin-on, in salted water until a fork slides through the center, about 12 minutes.

    While potatoes cook, toss cabbage with vinegar, sugar, salt, and pepper in a bowl. Let sit; stir once.

    When potatoes are cool enough to handle, peel and grate into a bowl. Fold in flour, salt, and pepper until it holds together.

    Heat butter in a large skillet over medium-high until foaming. Press grated potato into 4-inch patties and slide into the pan.

    Cook patties 3–4 minutes per side without moving until golden brown and edges crisp. Work in batches if needed.

    Serve hot farl alongside pickled cabbage slaw. Finish with a pinch of fleur de sel and cracked black pepper.
