Ingredients
- 3 whole potatoes, medium waxy
- ½ cup all-purpose flour
- 3 tbsp butter
- 2 cups green cabbage, shredded
- 2 tbsp white vinegar
- 1 tsp granulated sugar

Boil potatoes whole, skin-on, in salted water until a fork slides through the center, about 12 minutes.

While potatoes cook, toss cabbage with vinegar, sugar, salt, and pepper in a bowl. Let sit; stir once.

When potatoes are cool enough to handle, peel and grate into a bowl. Fold in flour, salt, and pepper until it holds together.

Heat butter in a large skillet over medium-high until foaming. Press grated potato into 4-inch patties and slide into the pan.
