Ingredients
- 8 oz Chinese roast pork (char siu), sliced thin
- 6 oz fresh egg noodles (or ramen)
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp granulated sugar
- 2 oz scallions, chopped

Boil egg noodles in salted water until just tender, about 3 minutes. Drain and set aside.

Heat 1 tbsp neutral oil in a large skillet over medium-high heat until shimmering.

Add sliced pork and cook without stirring for 2 minutes until edges crisp and char spots appear.

Stir in the cooked noodles, soy sauce, fish sauce, and sugar. Toss constantly for 1 minute until noodles glaze and absorb the liquid.

Remove from heat and scatter scallions over the top.
