Ingredients

  • 1.2 lb pork belly, skin-on, cut into 1.5-inch pieces
  • 2 tbsp fresh ginger, minced
  • 1 whole red chili (jalapeño or Thai), minced
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp palm sugar (or brown sugar)
  • ¼ cup fried shallots (crispy fried onions)

Instructions

  1. 1

Pat pork belly dry. Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

  2. 2

Place pork skin-side down in the pan. Cook 6-7 minutes without moving until skin crackles and browns deeply.

  3. 3

Flip pork. Cook 3 minutes more until the meat side is golden. Drain off excess fat, leaving 1 tbsp.

  4. 4

Add ginger and chili to the pan. Stir for 30 seconds until fragrant, then add soy sauce, lime juice, and sugar.

  5. 5

Toss pork in the glaze for 2 minutes until glossy and syrupy, turning gently to coat all sides.

  6. 6

Slide onto a plate and scatter fried shallots over top. Serve immediately with rice or lettuce wraps.

Tools you’ll need

  • large skillet (12-inch cast iron or stainless steel)
  • sharp knife
  • tongs
  • small bowl (for mixing glaze)
