Ingredients
- 1.2 lb pork belly, skin-on, cut into 1.5-inch pieces
- 2 tbsp fresh ginger, minced
- 1 whole red chili (jalapeño or Thai), minced
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp palm sugar (or brown sugar)
- ¼ cup fried shallots (crispy fried onions)

Pat pork belly dry. Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

Place pork skin-side down in the pan. Cook 6-7 minutes without moving until skin crackles and browns deeply.

Flip pork. Cook 3 minutes more until the meat side is golden. Drain off excess fat, leaving 1 tbsp.

Add ginger and chili to the pan. Stir for 30 seconds until fragrant, then add soy sauce, lime juice, and sugar.

Toss pork in the glaze for 2 minutes until glossy and syrupy, turning gently to coat all sides.
