Ingredients
- 1.5 lb pork belly, skin-on, cut into 2-inch chunks
- 3 tbsp fish sauce
- 2 whole lime, juiced
- 4 whole garlic cloves, minced
- 1 whole Thai red chili, thinly sliced
- 1 tbsp granulated sugar
- 3 tbsp water
- ¼ cup fresh cilantro, chopped

Pat pork belly dry with paper towels. Arrange skin-side up on a sheet pan in a single layer.

Roast at 425°F for 22–25 minutes until skin is crackling and golden, fat renders, edges brown.

While pork roasts, whisk fish sauce, lime juice, minced garlic, sliced chili, and sugar in a bowl.

Add 3 tbsp water to the sauce and stir until sugar dissolves. Taste and adjust lime or fish sauce.

Remove pork from oven. Rest 2 minutes, then transfer to a serving platter.

Drizzle pork with sauce, scatter cilantro over top, and serve immediately with extra sauce on the side.
