Ingredients
- 8 pieces papad wafers (dried, uncooked)
- 2 whole potatoes, medium
- 1 can (15 oz) canned chickpeas, drained
- ½ cup plain yogurt
- 2 tbsp tamarind paste
- 3 tbsp green chutney (cilantro-mint paste)
- ½ whole red onion, thinly sliced
- 2 tbsp fresh cilantro, chopped

Boil potatoes in salted water until tender, about 12 minutes. Drain, cool slightly, then cut into 1/2-inch cubes.

Heat 1/2 inch neutral oil in a skillet over medium-high until shimmering. Fry papad wafers 15 seconds per side until golden and crispy. Transfer to paper towels.

Stir together yogurt, tamarind paste, and a pinch of salt and cumin until smooth.

Lay 4 papad wafers flat on a serving plate. Spoon half the cubed potatoes and chickpeas over the wafers.

Drizzle half the yogurt mixture, then half the green chutney across the top. Scatter half the red onion.

Layer remaining 4 papad wafers, then repeat with remaining potatoes, chickpeas, yogurt, chutney, and onion. Finish with cilantro.
