Ingredients

  • 1 lb potatoes (russet or waxy)
  • ¾ cup all-purpose flour
  • 3 tbsp butter
  • 2 stalks scallions (green parts only), chopped
  • ½ tsp salt
  • ¼ tsp black pepper

    Boil potatoes whole and unpeeled in salted water until fork-tender, ~12 minutes.

    Drain and cool for 2 minutes, then peel while still warm.

    Mash potatoes roughly, then fold in flour, 1 tbsp butter, scallions, salt, and pepper until a dough forms.

    Divide dough in half, flatten each into a 0.5-inch-thick round on a work surface.

    Heat remaining 2 tbsp butter in a 10-inch skillet over medium-high until it sizzles.
