Ingredients

  • 1 can (8 oz) refrigerated biscuit dough (canned)
  • ½ cup jam or preserves (plum, apricot, or raspberry)
  • 2 cups neutral cooking oil for frying
  • ½ cup powdered sugar
  • ¼ tsp salt
  • ½ tsp lemon zest (optional)

Instructions

    Mix powdered sugar, salt, and lemon zest (if using) in a shallow bowl.

    Heat oil in a deep heavy skillet over medium-high heat until it shimmers and a wooden spoon handle sizzles when dipped in, ~3 minutes.

    Separate biscuit dough into 8 pieces. Flatten one piece into a thin disc, spoon 1 tbsp jam into the center, and fold the edges over to seal.

    Carefully slide 4 sealed dough balls into the hot oil. Fry until deep golden brown on both sides, ~90 seconds per side, turning gently with a slotted spoon.

    Lift pączki onto a paper towel-lined plate. Repeat with remaining 4 dough balls while oil is still hot.

    Toss warm pączki in the powdered sugar mixture while they're still hot. Serve immediately.
