- ½ cup jam or preserves (plum, apricot, or raspberry)
- 2 cups neutral cooking oil for frying
- ½ cup powdered sugar
- ¼ tsp salt
- ½ tsp lemon zest (optional)

Heat oil in a deep heavy skillet over medium-high heat until it shimmers and a wooden spoon handle sizzles when dipped in, ~3 minutes.

Separate biscuit dough into 8 pieces. Flatten one piece into a thin disc, spoon 1 tbsp jam into the center, and fold the edges over to seal.
