Ingredients

  • ¾ cup chickpea flour (besan)
  • 2 medium yellow onions, thinly sliced
  • 2 whole jalapeños, sliced
  • ½ cup water
  • ½ tsp cumin seeds
  • 2 cups oil for frying

    Mix chickpea flour, salt, cumin, and red chili powder in a bowl.

    Add water slowly, stirring until a thick batter forms (no lumps).

    Fold in sliced onions and half the jalapeños until evenly coated.

    Heat oil in a deep skillet to 350°F. Test with a tiny batter drop — it should sizzle immediately.

    Drop spoonfuls of batter into hot oil. Fry 2–3 minutes per side until deep golden brown and crispy.
