Ingredients

  • 3 medium yellow onions
  • ¾ cup chickpea flour (besan)
  • 1 tbsp ginger-garlic paste
  • 1 medium green chili, minced
  • ½ tsp cumin seeds
  • 2 cups neutral cooking oil for frying

Instructions

    Slice onions into thin half-moons, then place in a bowl with chickpea flour, ginger-garlic paste, green chili, cumin seeds, and a pinch of salt.

    Mix everything together until the onions release their moisture and form a loose, crumbly batter that just barely holds together.

    Heat oil in a deep skillet or wok to 350°F (you can test with a piece of onion — it should sizzle immediately and float).

    Drop small handfuls of the batter into the hot oil, gently spreading each fritter with a slotted spoon so it's 2-3 inches wide.
