Ingredients
- 2 whole onion (large, thinly sliced)
- 200 g paneer, cut into 1-inch cubes
- 1.5 cups fresh spinach and cilantro, chopped
- ¾ cup chickpea flour (besan)
- 1 whole green chili, minced
- 2 cup oil for deep frying
- ½ cup mint chutney (store-bought or fresh)
- ½ cup tamarind chutney (store-bought or fresh)
- ½ cup pickled onions

Mix chickpea flour, green chili, salt, and 1/4 cup water in a bowl until smooth thick batter forms, 2 minutes.

Fold sliced onions, paneer cubes, and chopped spinach-cilantro into batter until evenly coated.

Heat oil in a heavy-bottomed pot over medium-high until a drop of batter sizzles instantly, about 3 minutes.

Drop heaping spoonfuls of batter into hot oil in batches. Fry 2-3 minutes per side until deep golden and crispy.

Drain fritters on paper towels. Arrange on a platter with mint chutney, tamarind chutney, and pickled onions.
