- 1.5 lb chicken thighs
- 1 medium onion
- 2 medium tomato
- 3 cups mixed vegetables (carrots, cauliflower, green beans)
- 2 tbsp curry powder
- 3 cloves garlic
- 1.5 cups rice
- 2 tbsp vegetable oil

In a large pot, heat 2 tbsp vegetable oil over medium-high. Add 1 chopped onion and 3 minced garlic cloves; cook until soft and golden, about 5 minutes.

Add 2 tbsp curry powder and stir for 30 seconds until fragrant. Add 1.5 lb chicken thighs, cut into chunks; brown on all sides, about 5 minutes.
