Adjaruli Khachapuri

A Georgian cheese-filled bread shaped like a boat, with a molten cheese center and a runny egg, finished with butter. This quick version uses store-bought pizza dough for a fast, satisfying meal.

Ingredients

  • 1 lb pizza dough
  • 2 cups shredded mozzarella
  • ½ cup feta cheese
  • 1 large egg
  • 2 tbsp butter

Instructions

    Preheat oven to 450°F. On a floured surface, roll the 1 lb pizza dough into a 12x8 inch oval. Transfer to a parchment-lined baking sheet.

    Mix 2 cups mozzarella and 1/2 cup feta in a bowl. Spoon the cheese mixture down the center of the dough, leaving a 2 inch border on all sides.

    Cut the dough edges into 1 inch strips on each side. Fold the strips over the cheese, pinching the ends to form a boat shape with a well in the middle.

    Bake for 12-15 minutes, until the crust is golden and the cheese is bubbly. Remove from oven and make a well in the center of the cheese.

    Crack the 1 egg into the well and return to the oven for 3-4 minutes, until the egg white is set but yolk is still runny. Top with 2 tbsp butter and serve hot.

    Tear off pieces of the crust and dip into the egg and cheese mixture to eat.
