Crispy Vada Pav

Ingredients
- 1 lb russet potatoes
- ¾ cup all-purpose flour
- 3 tbsp tamarind paste
- 1 piece green chili (fresh, minced)
- ⅛ tsp asafoetida (hing)
- 1.5 cup neutral cooking oil (for frying)

Boil potatoes in salted water until tender, about 12 minutes. Drain, cool slightly, then peel and mash until smooth.

Mix mashed potatoes with flour, salt, pepper, asafoetida, and minced green chili until it forms a stiff dough.

Heat oil in a deep skillet over medium-high until it shimmers and a pinch of dough sizzles immediately.

Form potato mixture into 4–6 egg-shaped balls. Carefully slide into hot oil and fry 3–4 minutes per side until deep golden brown.

Remove vadas with a slotted spoon and drain on paper towels. Mix tamarind paste with 2 tbsp water and a pinch of salt for sauce.

Serve vadas hot with tamarind sauce for dipping.
