Ingredients
- 3 whole medium potatoes
- ¾ cup gram flour (besan)
- 1 whole green chili, minced
- 1 tbsp ginger, minced
- ½ tsp cumin seeds
- ¼ tsp turmeric powder
- 1 cup fresh cilantro, packed
- 1 whole green chili
- 1 tbsp lemon juice
- ¼ tsp salt

Boil potatoes whole until fork-tender, about 12 minutes. Drain, cool slightly, then peel and mash until smooth.

Blend cilantro, green chili, lemon juice, and salt into a smooth paste. Transfer to a bowl.

Mix mashed potato with gram flour, minced green chili, ginger, cumin seeds, turmeric, and a pinch of salt until you have a stiff batter.

Heat oil in a deep heavy-bottomed pot to 350°F (175°C). Using two spoons, gently slide egg-sized balls of batter into the hot oil.
