Ingredients

  • 2 whole potatoes, medium
  • ½ cup all-purpose flour
  • 1 tbsp ginger-garlic paste
  • 1 whole green chilies, finely minced
  • 2 cups neutral cooking oil for frying
  • ½ cup green chutney (store-bought)
  • ¼ cup dry garlic chutney (store-bought)

Instructions

    Boil potatoes until fork-tender, about 12 minutes. Drain, cool slightly, then peel and mash with salt and pepper.

    Fold flour, ginger-garlic paste, and minced green chili into the mashed potatoes until combined.

    Heat oil in a heavy-bottomed pot or deep skillet to 350°F (use a thermometer for accuracy).

    Shape potato mixture into 4 oval patties. Slide into hot oil and fry 3–4 minutes per side until deep golden brown.

    Drain vadas on paper towels. Arrange on a plate with green chutney, garlic chutney, fried green chilies, and sliced red onion alongside.
