Ingredients

  • 3 whole medium potatoes
  • ¾ cup all-purpose flour
  • 2 tbsp cornstarch
  • 4 whole green chilies, whole
  • 2 whole soft dinner rolls or pav bread
  • 3 cup neutral cooking oil for deep frying
  • 3 tbsp dry garlic chutney

Instructions

    Boil potatoes until fork-tender, ~12 minutes. Drain, cool slightly, then peel and mash with salt and black pepper.

    Whisk flour, cornstarch, and 1 tsp salt together. Mix in mashed potatoes until a stiff dough forms.

    Heat oil in a deep skillet to 325°F. Shape potato mixture into 2 oval balls and gently slide into hot oil.

    Fry 5–6 minutes until golden brown and a crust forms. Remove with a slotted spoon and drain on paper towels.

    Char green chilies in a dry skillet over medium-high heat, turning often, until blistered, ~3 minutes.

    Warm pav in a dry skillet 1 minute per side. Serve vada nestled in bread with chutney and charred chili on the side.
