Ingredients
- 3 whole medium potatoes
- ¾ cup all-purpose flour
- 2 tbsp cornstarch
- 4 whole green chilies, whole
- 2 whole soft dinner rolls or pav bread
- 3 cup neutral cooking oil for deep frying
- 3 tbsp dry garlic chutney

Boil potatoes until fork-tender, ~12 minutes. Drain, cool slightly, then peel and mash with salt and black pepper.

Whisk flour, cornstarch, and 1 tsp salt together. Mix in mashed potatoes until a stiff dough forms.

Heat oil in a deep skillet to 325°F. Shape potato mixture into 2 oval balls and gently slide into hot oil.

Fry 5–6 minutes until golden brown and a crust forms. Remove with a slotted spoon and drain on paper towels.
