Ingredients

  • 3 medium, thinly sliced yellow onions
  • ¾ cup all-purpose flour
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • 1 small green chili, minced
  • 1 cup basmati rice, cooked
  • 1 cup chicken curry (jarred or prepared)
  • 1 tbsp tamarind or lime juice

Instructions

  1. 1

Toss onions, flour, garam masala, turmeric, and green chili in a bowl. Add 3 tbsp water and salt until batter clings to onions.

  2. 2

Heat 1 inch neutral oil in a deep skillet over medium-high until a pinch of batter sizzles immediately, ~3 minutes.

  3. 3

Drop spoonfuls of onion batter into oil; fry 2-3 minutes per side until deep golden brown and crispy.

  4. 4

Transfer bhaji to a paper towel–lined plate. Warm curry in a small pot or microwave until steaming.

  5. 5

Plate rice, curry, and bhaji. Drizzle bhaji with tamarind or lime juice and serve immediately.
