  • ¾ cup chickpea flour (besan)
  • 1 whole green chili, minced
  • ½ tsp cumin seeds
  • 2 cups neutral oil for frying
  • ½ cup combined mint and tamarind chutney (store-bought or homemade)

    Heat oil in a heavy skillet to 350°F over medium-high. Test with a single onion slice — it should sizzle aggressively immediately.
