Ingredients

  • 3 medium yellow onions, thinly sliced
  • ¾ cup chickpea flour (besan)
  • 1 small green chili, minced
  • 1 tbsp ginger, minced
  • 1 cup fresh mint leaves, packed
  • 1 whole lime
  • ¼ cup coconut, shredded (unsweetened)

Instructions

    Blend mint, lime juice, coconut, and 2 tbsp water until smooth. Transfer to a small bowl.

    Toss onions with chickpea flour, green chili, ginger, 1 tsp salt, and 1/2 tsp black pepper until coated.

    Heat 1 inch of oil in a deep skillet over medium-high until a pinch of flour sizzles on contact, ~2 minutes.

    Drop spoonfuls of the mixture into hot oil. Fry 2–3 minutes per side until deep golden and edges curl.

    Drain on paper towels. Serve hot with mint chutney on the side.
