Ingredients
- 1 cup Emmental or Gruyère cheese, finely grated
- 4 oz mushrooms, finely chopped
- 1 whole shallot, minced
- 2 whole egg yolks
- ¾ cup panko breadcrumbs
- ¼ cup all-purpose flour
- 1 whole whole egg, beaten (for egg wash)
- 4 slices sliced bread (for serving)

Heat a skillet over medium. Sauté shallot for 2 minutes until soft, then add mushrooms and cook 4 minutes until liquid releases and evaporates.

Cool mushroom mixture 3 minutes. Mix with grated cheese and egg yolks in a bowl until a sticky paste forms.

Form mixture into a 2-inch ball. Chill in freezer for 10 minutes until firm enough to handle.

Set up three shallow bowls: flour in one, beaten egg in the second, panko in the third. Roll ball in flour, then egg, then panko until fully coated.

Heat oil in a deep skillet to 350°F (use a thermometer). Slide ball in and fry 3 minutes, turning once, until golden brown on all sides.
