Ingredients

  • ¾ lb ground lamb
  • 1.5 cups cooked long-grain rice
  • 4 sheets phyllo sheets
  • ½ medium yellow onion, minced
  • 1.5 tsp warm spice blend (cumin, cinnamon, allspice)
  • ¼ cup pine nuts, toasted (optional garnish)

Instructions

    Heat 2 tbsp oil in a 12-inch skillet over medium-high. Add minced onion, cook 2 minutes until soft.

    Add ground lamb, break up with a spoon, brown until no pink remains, ~5 minutes.

    Stir in spice blend, then fold in rice. Cook 1 minute until fragrant and heated through.

    Lay one phyllo sheet on your work surface, brush lightly with oil, layer 3 more sheets, brushing each.

    Spoon lamb-rice mixture down the center, roll tightly into a log, tuck in the ends.

    Wipe skillet, heat 3 tbsp oil over medium. Sear the wrap seam-side down until golden, 2–3 minutes per side.
