Crispy Hash Pyttipanna

Ingredients
- 1 lb potatoes, waxy (baby gold or fingerling)
- 4 oz bacon, chopped
- 4 oz ham, diced
- ½ medium yellow onion, diced
- 2 tbsp butter
- 2 large eggs

Dice potatoes into 1/2-inch cubes, leaving skins on.

Cook bacon in a 12-inch skillet over medium-high until crispy, 4 minutes. Remove to a plate.

Add potatoes to bacon fat. Sear without stirring for 3 minutes until edges brown. Stir, then cook 2 more minutes.

Add butter and onion. Stir and cook until onion softens and potatoes are golden, 3 minutes.

Fold in bacon and ham. Make two wells in the hash, then crack an egg into each.

Cover and cook until egg whites set, 2 to 3 minutes. Yolks should still jiggle.
