- 8 oz halloumi cheese
- 1 large pita bread
- 3 cups mixed greens
- 1 medium cucumber
- 1 cup cherry tomatoes
- 1 whole lemon (juiced + zested)

Tear pita into rough 1-inch pieces. Heat 1 tbsp olive oil in a skillet over medium-high until shimmering, then toast pita pieces, tossing occasionally, until golden and crispy, 3–4 minutes. Transfer to a plate.

Pat halloumi dry. Slice into 0.5-inch-thick planks. Add 1 tbsp olive oil to the same skillet over medium-high and sear halloumi 2–3 minutes per side until golden and slightly softened.

Toss greens, sliced cucumber, and tomatoes in a bowl with the lemon juice, lemon zest, remaining 1 tbsp olive oil, salt, and pepper.
