Ingredients
- 8 pieces (about 3 lb) chicken thighs, bone-in and skin-on
- 3 tbsp gochujang (Korean red chili paste)
- 2 tbsp mirin or honey
- 2 tbsp soy sauce
- 2 tbsp butter
- 3 cloves garlic, minced
- 3 stalks green onions, sliced
- 1 tbsp sesame seeds

Pat chicken thighs dry. Season generously with salt and black pepper on both sides.

Arrange chicken skin-side up on a sheet pan. Roast at 425°F for 18-20 minutes until skin is golden and crispy.

While chicken cooks, mix gochujang, mirin, soy sauce, and garlic in a small bowl until smooth.

Remove chicken from oven. Brush glaze all over each thigh, then dot with butter pieces.

Return to oven for 3-4 minutes until glaze caramelizes and edges look sticky and glossy.
