Ingredients

  • 8 pieces (about 3 lb) chicken thighs, bone-in and skin-on
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp mirin or honey
  • 2 tbsp soy sauce
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 3 stalks green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. 1

Pat chicken thighs dry. Season generously with salt and black pepper on both sides.

  2. 2

Arrange chicken skin-side up on a sheet pan. Roast at 425°F for 18-20 minutes until skin is golden and crispy.

  3. 3

While chicken cooks, mix gochujang, mirin, soy sauce, and garlic in a small bowl until smooth.

  4. 4

Remove chicken from oven. Brush glaze all over each thigh, then dot with butter pieces.

  5. 5

Return to oven for 3-4 minutes until glaze caramelizes and edges look sticky and glossy.

  6. 6

Transfer to a serving platter. Scatter green onions and sesame seeds over the top. Serve immediately.
