Ingredients
- 1.5 cups store-bought dosa batter (or dosa mix)
- 4 tbsp ghee, divided
- 1 medium yellow onion, thinly sliced
- ½ tsp black mustard seeds
- 8 leaves curry leaves, fresh
- ¼ tsp red chili powder
- 3 tbsp fresh cilantro, chopped

Heat 1 tbsp ghee in a large skillet over medium-high until it shimmers and smells nutty, about 1 minute.

Add sliced onion and cook, stirring often, until edges brown and char, 5–6 minutes. Scrape onto a plate.

Pour 0.5 cup batter into the center of the skillet and spread in a thin circular motion until the crepe is lacy and edges are translucent.

Drizzle 0.75 tbsp ghee around the edges, then scatter mustard seeds, curry leaves, and a pinch of red chili powder on top.

Cook until the bottom is golden and crispy, 2–3 minutes, then flip carefully and cook the other side for 1 minute until light brown.

Slide onto a plate, top with roasted onions and cilantro, then repeat with remaining batter and ghee. Serve hot.
