Ingredients

  • 8 count spring roll wrappers
  • 1.5 cups shredded cabbage
  • ½ cup shredded carrot
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 portion lettuce and cucumber (for serving)

Instructions

    Toss cabbage, carrot, soy sauce, vinegar, and sesame oil together in a bowl until evenly coated.

    Lay a spring roll wrapper on a work surface and fill the center with 2 tablespoons of the cabbage mixture.

    Fold the bottom corner over the filling, roll tightly halfway, fold in the sides, then finish rolling to seal.

    Repeat with remaining wrappers and filling until you have 8 rolls.

    Heat 1 inch of oil in a skillet over medium-high until a wooden spoon sizzles when dipped in, ~2 minutes.

    Fry rolls in batches 2–3 minutes per side until golden brown and edges curl. Drain on paper towels.

    Stir soy sauce, vinegar, and 1 tablespoon water together for dipping sauce.
