Ingredients
- 1 lb clam strips (fresh or thawed frozen)
- ¾ cup all-purpose flour
- ¾ cup light beer or sparkling water
- 2 cups neutral oil (canola or vegetable)
- ¼ cup hot sauce (Frank's or similar)
- 1 whole lemon (halved)

Whisk flour, beer, and 0.5 tsp salt until smooth batter forms, no lumps.

Working in two batches, dip clam strips in batter to coat, then slide into hot oil.
