Ingredients

  • 1 lb clam strips (fresh or thawed frozen)
  • ¾ cup all-purpose flour
  • ¾ cup light beer or sparkling water
  • 2 cups neutral oil (canola or vegetable)
  • ¼ cup hot sauce (Frank's or similar)
  • 1 whole lemon (halved)

Instructions

    Pat clam strips dry with paper towels. Season generously with salt and black pepper.

    Whisk flour, beer, and 0.5 tsp salt until smooth batter forms, no lumps.

    Heat oil in a heavy pot over medium-high until a thermometer reads 350°F, ~8 minutes.

    Working in two batches, dip clam strips in batter to coat, then slide into hot oil.

    Fry until golden and edges curl, 3–4 minutes per batch. Remove with a slotted spoon.

    Drain on paper towels. Serve with hot sauce for dipping and lemon wedges on the side.
