Ingredients
- 4 fillets (about 6 oz each) catfish fillets
- ¾ cup all-purpose flour
- ½ cup cornmeal
- 1 lb bag frozen french fries
- 3 cups coleslaw mix (pre-shredded cabbage + carrots)
- ½ cup mayonnaise-based tartar sauce

Preheat oven to 425°F. Spread fries on a sheet pan, toss with oil and salt, then roast for 18–20 minutes, stirring halfway.

While fries cook, mix flour, cornmeal, 1 tsp salt, and 0.5 tsp black pepper in a shallow bowl.

Pat catfish dry. Dredge each fillet in the flour mixture, coating both sides, then set on a plate.

Heat 0.5 inch neutral oil in a large skillet over medium-high until it shimmers, about 2 minutes.

Carefully slide 2 fillets into the hot oil. Fry 3–4 minutes per side without moving until golden and crispy.

Transfer to a paper towel–lined plate. Repeat with remaining fillets. Toss coleslaw with 2 tbsp mayo and a pinch of salt.
