Ingredients
- 1.5 cans (15 oz) canned fava beans (or chickpeas), drained and rinsed
- ½ medium yellow onion, roughly chopped
- ½ cup fresh parsley, loosely packed
- ½ tsp ground cumin
- 3 tbsp all-purpose flour
- 3 tbsp tahini

Pulse fava beans, onion, parsley, cumin, and 0.5 tsp salt in a food processor until mixture is chunky, not smooth—about 10 pulses.

Fold in flour until just combined. If mixture won't hold together, add 1 more tbsp flour. Chill while you heat the pan.

Heat 0.25 inch of oil in a skillet over medium-high until shimmering. Scoop mixture into 2-tbsp patties, flatten slightly.

Fry patties 2-3 minutes per side until deep golden brown and crispy. Work in batches; don't crowd the pan.

Whisk tahini with 3 tbsp water and a pinch of salt until it's pourable and creamy. Serve fritters hot with tahini sauce.
