Ingredients
- 2 pieces sesame pita bread
- 4 cups mixed greens (romaine, arugula, or spring mix)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 whole (juiced) lemon
- 1 tbsp sumac
- ¼ cup pine nuts, toasted

Cut pita bread into 1-inch pieces. Spread on a sheet pan and toast at 400°F until golden and crisp, about 5–6 minutes.

While pita toasts, combine tomatoes and cucumber in a large bowl with a pinch of salt and pepper.

Whisk lemon juice with 3 tbsp olive oil, 1 tsp sumac, salt, and pepper until emulsified.

Add greens and warm pita chips to the tomato mixture. Pour dressing over and toss gently until everything is coated.

Transfer to plates and sprinkle toasted pine nuts and remaining sumac on top. Serve immediately.
