Ingredients

  • 6 slices bacon, chopped
  • 1 lb medium waxy potatoes
  • ½ medium yellow onion, diced
  • 8 large eggs
  • 2 tbsp fresh chives or parsley, chopped

Instructions

    Cut potatoes into 1/4-inch cubes. Cook bacon in a 12-inch skillet over medium-high until crispy, ~8 minutes.

    Remove bacon to a plate, leaving fat in the pan. Add potatoes and onion; cook undisturbed for 5 minutes until edges brown.

    Stir and cook 5 more minutes until potatoes are golden and tender when pierced with a fork.

    Whisk eggs with salt and pepper. Pour into the skillet and scramble gently until soft curds form, ~3 minutes.

    Stir in the cooked bacon and fresh herbs. Serve hot straight from the skillet.
