- 6 count sausage patties or links
- 1.5 cups potatoes, diced small
- 8 oz mushrooms, sliced
- 4 count eggs
- 2 tbsp butter
- 1 medium tomatoes, sliced
- ½ count cucumber, sliced
- 4 count bread slices, for toasting

Cook sausage in a 12-inch skillet over medium-high heat until browned, breaking into chunks as it cooks, about 6 minutes.

Remove sausage and set aside. Add butter and diced potatoes to the skillet; cook, stirring occasionally, until edges turn golden, about 8 minutes.

Stir in sliced mushrooms and cook for 2 minutes until they release moisture and begin to soften.

Crack eggs directly into the skillet and nestle them among the vegetables. Return sausage to the pan.
