Ingredients

  • 6 oz day-old bread (Spanish-style or crusty white), cut into 1/2-inch cubes
  • 3 oz chorizo sausage, cut into 1/4-inch rounds
  • 2 oz cured ham (jamón or prosciutto), torn into bite-sized pieces
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

    Heat 2 tablespoons of olive oil in a 10-inch skillet over medium-high heat until it shimmers and slides quickly when you tilt the pan, about 90 seconds.

    Add the bread cubes in a single layer across the bottom of the skillet and cook, stirring every 15 seconds, until golden brown and crispy all over, about 4 minutes total. They should look the color of warm honey.

    Push the bread cubes to the sides of the skillet, creating a small empty space in the center.

    Pour the chorizo rounds into the empty center and cook, stirring occasionally, until the chorizo is cooked through and has released its oil, about 3 minutes.

    Add the torn ham pieces to the skillet and toss everything together—bread, chorizo, and ham—until evenly mixed, about 1 minute.
