Ingredients
- 6 oz bacon, sliced into 1/2-inch pieces
- 4 cups potatoes, diced into 1/2-inch cubes (about 1 lb)
- ½ medium onion, diced
- 4 large eggs
- ½ tsp caraway seeds (optional but traditional)
- 2 tbsp fresh parsley, chopped (optional)

Cook bacon in a 12-inch skillet over medium heat until edges curl and fat renders, about 5 minutes. Transfer to a plate, leaving 2 tbsp fat in the pan.

Add diced potatoes and onion to the skillet. Cook without stirring for 3 minutes until the bottom browns, then stir and cook another 5 minutes until edges crisp.

Return bacon to the skillet. Sprinkle caraway seeds over the top. Make four small wells in the hash and crack an egg into each.

Cover the skillet with a lid or foil. Cook over medium-low heat until egg whites set but yolks still jiggle, about 4 minutes.

Sprinkle parsley over the top if using. Slide onto a plate and serve straight from the skillet, or divide between plates.
