Ingredients

  • ½ lb ground beef
  • ½ medium yellow onion, finely diced
  • 1.5 tsp Ethiopian berbere spice (or garam masala + cayenne)
  • 12 count wonton wrappers
  • 2 cups neutral oil for frying
  • 2 cups heads of lettuce (romaine or iceberg), chopped
  • ½ medium red onion, thinly sliced

Instructions

  1. 1

Brown ground beef with diced onion in a skillet over medium-high heat, breaking up clumps, until no pink remains, about 5 minutes.

  2. 2

Stir in berbere spice and salt to taste, then remove from heat and let cool slightly, about 2 minutes.

  3. 3

Spoon 1 tbsp filling into the center of each wonton wrapper, fold into a triangle, and seal edges with wet fingers.

  4. 4

Heat oil to 350°F in a heavy pot or deep skillet, then fry sambuusas in batches until deep golden, about 2 minutes per batch.

  5. 5

Transfer fried sambuusas to a paper-towel-lined plate to drain, then season with salt.

  6. 6

Toss chopped lettuce with sliced red onion, a pinch of salt, and a splash of white vinegar, then serve alongside warm sambuusas.
