Ingredients
- ½ lb ground beef
- ⅓ cup red lentils, rinsed
- ½ medium yellow onion, minced
- 1 tbsp ginger, minced
- 2 tsp berbere spice (or chili powder + cumin + paprika)
- 16 count wonton wrappers
- 1 cup neutral oil for frying

Cook lentils in simmering water until just tender, about 8 minutes. Drain and set aside.

Brown ground beef in a large skillet over medium-high, breaking it up as it cooks, about 5 minutes.

Add minced onion and ginger to the beef. Stir until fragrant, about 90 seconds.

Stir in berbere and cooked lentils. Cook 1 minute to marry flavors, then cool slightly.

Spoon 1 tbsp filling into the center of each wonton wrapper. Fold into a triangle, then fold corners together to seal.

Heat oil in a deep skillet to 350°F. Fry sambusan in batches until golden brown, about 2 minutes per side. Drain on paper towels and serve hot.
