Crispy Sambusa with Spiced Beef & Lettuce

Ingredients
- ½ lb ground beef
- 1 medium potato, diced small
- ¼ cup yellow onion, minced
- 1 tbsp ginger-garlic paste
- 1.5 tsp Ethiopian spice blend (berbere or curry powder)
- 12 count wonton wrappers or phyllo sheets
- 2 cups fresh lettuce, torn

Boil diced potato in salted water until just tender, about 5 minutes. Drain and set aside.

Heat oil in a skillet over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, ~6 minutes.

Add minced onion and ginger-garlic paste. Stir until fragrant, about 90 seconds.

Stir in cooked potato and berbere spice. Cook for 1 minute, then remove from heat and cool slightly.

Place 1 tbsp filling on the corner of each wonton wrapper. Fold into a triangle, seal edges with water.

Heat oil to 350°F in a deep skillet. Fry sambusos 2–3 minutes per side until deep golden. Drain on paper towels.
