Ingredients
- ½ lb ground beef
- ½ medium yellow onion, minced
- 1 tbsp ginger-garlic paste (or 1 tbsp each minced fresh)
- 8 sheets phyllo dough sheets
- 1.5 cups neutral oil for frying
- ½ cup harissa or hot sauce (for dipping)
- 1 tsp each salt, black pepper, cumin, turmeric
Instructions
- 1
Brown ground beef in a skillet over medium-high, breaking apart with a spoon, until no pink remains, ~5 minutes.
- 2
Stir in minced onion, ginger-garlic paste, salt, pepper, cumin, and turmeric. Cook 2 minutes until fragrant.
- 3
Transfer beef mixture to a plate to cool. Lay one phyllo sheet flat, brush lightly with oil.
- 4
Place 2 tbsp filling in the corner; fold into a tight triangle, sealing edges with oil. Repeat for remaining sheets.
- 5
Heat oil in a deep skillet over medium-high to 350°F (test with a pinch of dough—it should sizzle immediately).
- 6
Fry sambusas 3–4 per batch, 90 seconds per side until deep golden brown. Rest on paper towels.
- 7
Serve hot with harissa or hot sauce for dipping.
