Ingredients

  • ½ lb ground beef
  • ½ medium yellow onion, minced
  • 1 tbsp ginger-garlic paste (or 1 tbsp each minced fresh)
  • 8 sheets phyllo dough sheets
  • 1.5 cups neutral oil for frying
  • ½ cup harissa or hot sauce (for dipping)
  • 1 tsp each salt, black pepper, cumin, turmeric

Instructions

    Brown ground beef in a skillet over medium-high, breaking apart with a spoon, until no pink remains, ~5 minutes.

    Stir in minced onion, ginger-garlic paste, salt, pepper, cumin, and turmeric. Cook 2 minutes until fragrant.

    Transfer beef mixture to a plate to cool. Lay one phyllo sheet flat, brush lightly with oil.

    Place 2 tbsp filling in the corner; fold into a tight triangle, sealing edges with oil. Repeat for remaining sheets.

    Heat oil in a deep skillet over medium-high to 350°F (test with a pinch of dough—it should sizzle immediately).

    Fry sambusas 3–4 per batch, 90 seconds per side until deep golden brown. Rest on paper towels.
