Ingredients

  • 2 slices sourdough bread
  • 1 whole avocado, ripe
  • 2 whole eggs
  • 2 tbsp butter
  • ¼ tsp red pepper flakes
  • ½ whole lemon
  • 1 pinch fleur de sel or finishing salt

Instructions

    Toast the sourdough slices until golden brown at the edges and crispy throughout, 3-4 minutes.

    Cut the avocado in half, scoop flesh into a bowl, and smash with a fork until creamy with small chunks.

    Heat 1 tbsp butter in a skillet over medium-high until foaming, then crack both eggs into the pan.

    Fry until whites are opaque and edges are crispy but yolks still jiggle, 3-4 minutes.

    Spread smashed avocado on each toast, squeeze lemon juice over the top, then divide the fleur de sel.
