Ingredients

  • 2 whole eggs
  • ½ cup scallions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • ½ tsp sugar

Instructions

    Mix flour with 0.5 cup water, salt, and 1 tbsp oil into a rough dough; let rest 2 minutes.

    Knead dough 30 seconds until smooth, then press flat on a sheet of plastic wrap into a thin 8-inch round.

    Heat 1 tbsp oil in a nonstick skillet over medium-high until shimmering, ~60 seconds.

    Slide dough into skillet. Crack 1 egg onto the center, scatter half the scallions over top, press gently.

    Cook 2 minutes until bottom edges crisp and curl slightly, then flip and cook 90 seconds more.
