Ingredients

  • 3 whole potatoes, medium
  • ¾ cup plain yogurt
  • 3 tbsp all-purpose flour
  • 1 whole green chili, minced
  • ½ tsp chaat masala
  • 4 tbsp neutral oil for frying

    Boil potatoes in salted water until a fork pierces them easily, ~12 minutes.

    Drain potatoes, let cool 2 minutes, then peel and mash into a coarse paste.

    Fold flour, green chili, and 0.25 tsp chaat masala into mashed potatoes with a pinch of salt.

    Shape mixture into 4 patties, 2.5 inches wide. Press gently so they hold together.

    Heat oil in a skillet over medium-high until it shimmers. Pan-fry patties 3 minutes per side until deep golden.
