Ingredients
- 1.5 cups rotisserie chicken, shredded
- 6 sheets phyllo dough sheets
- 4 tbsp butter, melted
- ½ tsp ground cinnamon
- 1 whole lemon (zested + juiced)
- ¼ cup pine nuts, toasted

Preheat oven to 400°F. Mix shredded chicken with lemon zest, lemon juice, cinnamon, salt, and pepper until fragrant.

Brush one phyllo sheet with melted butter. Layer 2 more sheets on top, brushing each with butter.

Spoon half the chicken mixture and half the pine nuts along one long edge, leaving a 2-inch border.

Roll tightly from the filling side, tucking in the sides as you go. Brush the outside generously with butter.

Repeat steps 2–4 with remaining phyllo, chicken, and pine nuts. Place both rolls seam-side down on a sheet pan.
