Ingredients
- 8 sheets phyllo dough
- 200 g white cheese (akkawi or mozzarella), shredded
- 4 tbsp unsalted butter, melted
- ½ cup honey
- 1 tbsp orange blossom water
- ¼ cup roasted pistachios, roughly chopped

Warm honey with orange blossom water in a small saucepan over low heat. Set aside.

Lay one sheet of phyllo on a clean surface. Brush lightly with melted butter.

Sprinkle 25g shredded cheese across the short end. Roll tightly away from you, tucking sides as you go. Repeat with remaining phyllo and cheese.

Heat remaining butter in a large skillet over medium-high until shimmering. Place rolls seam-side down in batches.

Fry 2–3 minutes per side until deep golden brown and crispy. Transfer to a serving plate.

Drizzle warm honey syrup generously over hot rolls. Scatter pistachios on top and serve immediately.
