Ingredients
- 4 oz shredded phyllo dough (kataifi)
- 4 tbsp unsalted butter
- ¾ cup white cheese (mozzarella or feta), shredded
- ½ cup honey
- ¼ cup water
- ½ cup roasted pistachios, crushed, plus walnuts

Heat butter in a 10-inch skillet over medium-high until foaming, about 1 minute.

Add shredded phyllo and toss constantly until golden and crispy, 4–5 minutes. Break up any clumps.
